Garbanzo Bean & Green Pea Stir-Fry

Today’s Cooking & Eating Adventure

When I’m feeling creative but don’t want to follow a recipe that might require ingredients I don’t have, I often look in the fridge and pantry for inspiration. Yesterday was one of those days. It all started when I spotted a package of Rancho Gordo garbanzo beans and some sun-dried tomatoes. What came together was an exceptional dish. I’ve made many meals that turned out well, but this one was truly outstanding and simple to make.

How to Cook Garbanzos or any bean.

This Garbanzo Bean Stir-Fry is an absolute delight—both in flavor and appearance. The dish is rich with layers of savory depth from sautéed shallots, garlic, and poblano peppers, while the sun-dried tomatoes add a tantalizing burst of umami. The garbanzo beans, tender and hearty, meld perfectly with the sweet green peas, creating a satisfying texture that’s both comforting and vibrant.

Served over a bed of fluffy rice, it’s a feast for the eyes as much as it is for the taste buds. The colors pop—deep greens from the peppers and peas, golden hues from the beans, and the warm reds of the sun-dried tomatoes—all coming together in a beautiful, nourishing harmony. It’s a dish that feels as indulgent as it does wholesome, offering a rich, flavorful experience that’s truly unforgettable.

Notes
– You can easily swap out the rice for quinoa or couscous, depending on your preference or what you have on hand.

– If you’re looking to boost the flavor even more, consider adding some spices like cumin, smoked paprika, chili powder or a squeeze of lemon.
